Baby Back Ribs

  • Preheat your pellet smoker to 225°F.

  • Remove the membrane from the back of the ribs by lifting a corner with a knife and pulling it off with a paper towel.

  • Rub the ribs all over with the yellow mustard.

  • Sprinkle the BBQ rub generously over both sides of the ribs, patting it in with your fingers.

  • Place the ribs on the pellet smoker, bone-side down.

  • Smoke the ribs for 3 hours.

  • In a small mixing bowl, whisk together the BBQ sauce, apple cider vinegar, and honey.

  • After 3 hours, remove the ribs from the pellet smoker and wrap each rack tightly in aluminum foil.

  • Pour half of the BBQ sauce mixture over each wrapped rack of ribs.

  • Return the ribs to the pellet smoker, bone-side down, and continue smoking for an additional 2 hours.

  • After 2 hours, remove the ribs from the pellet smoker and unwrap them from the foil.

  • Brush the remaining BBQ sauce mixture onto both sides of the ribs.

  • Return the ribs to the pellet smoker, bone-side down, and continue smoking for an additional 30 minutes.

  • Remove the ribs from the pellet smoker and let them rest for 10-15 minutes.

  • Cut the ribs into individual portions and serve hot.
