Beasley's Hatch Coconut Rice

Yields 6 servings
Prep time: Approx 75 minutes
Ingredients:
2 tbsp butter
1 ½ cups rice, short grain, or long grain
14.5 oz coconut milk canned
1 cup water
2 tablespoons brown sugar
1 tablespoon Beasley’s Smokehouse Rub Hatch Batch
½ teaspoon salt
Directions:1. In a large skillet, add the butter and turn heat to medium. Add the rice and cook, stirring frequently, until rice takes on a golden color.
2. Place all ingredients in a pot, bring to a boil, cover, and cook until all liquid is absorbed. (stir occasionally through this process)
